The annual Preserving the Harvest workshop returns Saturday at the Gallatin County Fairgrounds Exhibit Hall B. MSU Extension agents will demonstrate water-bath canning, pressure canning, and three distinct zucchini relish recipes developed specifically for the 40-pound average backyard yield. Attendees receive a free Ball Blue Book and a compostable tote bag for transporting surplus to the food bank drop-off bin in the parking lot. Master Gardener volunteers will staff a diagnostic table for blossom-end rot questions. “I planted four hills thinking two would die,” said Linda Houser of Bridger Canyon. “Now I have a relationship with every neighbor’s porch.”
