The price of a prime ribeye has reached such heights that local ranchers are starting to treat their herds like high-security assets. While most people in the Gallatin Valley are concerned about the rising cost of a gallon of milk, the agricultural community is bracing for what they call “the Great Cattle Caper.”

“I caught a guy in a tailored vest trying to lead a heifer into the back of a Land Cruiser last Tuesday,” said Silas Thorne, who runs a spread near Four Corners. “He told me he just wanted some ‘authentic local sourcing’ for his sourdough workshop. I told him that heifer wasn’t an ingredient, she was family.”
